A must-make from 'Chopped' star Marc Murphy!

Marc Murphy is the chef and owner of Marc179 in New York City. He's a long-time guest judge on Chopped, and has appeared on many other Food Network shows, including Beat Bobby Flay and Guy's Grocery Games.

This recipe is salad-tastic, and comes courtesy of Chef Marc Murphy. You no doubt recognize Marc from being a longtime guest judge on Chopped, or from one of his many appearances on other Food Network hits like Beat Bobby Flay or Guy’s Grocery Games. He’s not just a TV mainstay; he’s also the owner/chef of Marc179 in New York City and has worked in the city’s culinary scene for decades. He’s also a friend, and straight up good people.


With good reason, a lot of summer cooking follows a very basic principle: less is more. With ripe summer produce, the less you do to it, the more you let the ingredients shine — and the better the final outcome will taste. This, to me, is the quintessential summer salad.

Zucchini, Pecorino and Mint Salad

    1. Using a mandolin with the julienne attachment, cut the zucchini into spaghetti-like strands. Toss the zucchini in a bowl with the olive oil, lemon juice and mint, and season to taste with salt and pepper.

    2. Using a vegetable peeler, make shavings of the Pecorino Romano and place on top of the salad. You can also finely grate the cheese if you prefer. Serve immediately.
