A Margarita Mocktail Anyone Can Drink!

We’re in the midst of margarita season…but that doesn’t mean you need to be in the throes of a hangover the next day. Such is the joy of the mocktail. We’re no stranger to them here at Wondercade, and we’re no stranger to a good margarita, either. Behold, this lovely version from 1310 Kitchen & Bar in Washington, D.C. Jenn Crovato, chef and proprietor, says that the sweet flavors of pineapple balance the spice of the jalapeño for a zesty and zero-proof margarita all your friends and family will love.

Pineapple Jalapeño Mockarita

Servings: 2 mocktails

Ingredients
  • 1 cup lime juice 
  • 4 Tbsp. tonic water 
  • 1 cup fresh-pressed pineapple juice 
  • 4 Tbsp. jalapeño mint simple syrup (recipe follows)
  • Tajin, for garnish
  • Mint, for garnish
  • Sliced jalapeño, for garnish
  • Dehydrated pineapple, for garnish
For the jalapeño mint simple syrup:
  • ½ cup water 
  • ½ cup sugar 
  • ¼ cup jalapeño sliced, with seeds
  • 4 sprigs mint

  • For the jalapeño mint simple syrup:
    1. In a small saucepan, add the water and sugar. Bring to a boil while stirring occasionally.

    2. It should become clear as the sugar dissolves. Add jalapeño and mint, and simmer over low heat for 10 minutes.

    3. Remove from heat and let the syrup cool to room temperature. Strain out the jalapeño and mint and pour into a separate container.

  • For the Pineapple Jalapeño Mockarita:
    1. Mix all ingredients in a shaker with ice. Strain into an ice filled glass.

    2. Garnish with Tajin, fresh mint, sliced jalapeño and dehydrated pineapple.
