A Margarita Mocktail That’s Spicy and Sweet

We love mocktails here at Wondercade, every season…but considering how fruity and delicious summer sippables are, we’re especially keen on trying this wholly boozeless margarita. “This is a fun riff on a zero-proof margarita for summer,” says Jenn Crovato, chef and proprietor of 1310 Kitchen & Bar in Washington D.C.’s Georgetown neighborhood. “The sweet flavors of the pineapple balance the spice of the jalapeño for a sip that is refreshing and zesty.”

    1. 1. For the jalapeño mint simple syrup: In a small saucepan add the water and sugar. Bring to a boil while stirring occasionally. Should become clear as sugar dissolves. Add jalapeño and mint, and simmer over low heat for 10 minutes. Remove from heat and allow syrup to cool to room temperature. Pour into a separate container and strain out the jalapeño and mint.

    2. 2. Mix all ingredients in a shaker with ice. Strain into an ice-filled glass. Garnish with Tajin, fresh mint, sliced jalapeño and dehydrated pineapple.
